Interpretive Summary:

Technical Abstract: Z-Trim is a new texturizing ingredient which offers a healthful alternative to consumers seeking pleasing textures with lower calories. It is made from a variety of low-cost agricultural byproducts such as hulls of oats, corn, rice, soybean, and peas, or brans from corn and wheat. These fibrous materials are treated in a multistage process to completely disintegrate their morphological cellular structures. The cellular fragments are purified, dried, and milled to an easy-flowing powder. When rehydrated, Z-Trim particles absorb water producing large deformable structures giving inordinately high viscosities with smooth mouth feel. Applications in bakery, dairy, and meat foods will be discussed.
