Publication Type: Abstract Only Publication Acceptance Date: 4/17/1997 Publication Date: N/A Citation: N/A Interpretive Summary: Technical Abstract: Over a wide range of temperature (25-70 deg C), alpha-cyclodextrin (alpha- CD) was converted by Bacillus macerans CGTase into highly insoluble high-amylose starch of low degree of polymerization (average dp 56-74) in yields as high as 78%. The degree of polymerization increased with an increase in reaction temperature. Percentages of amylose in the high-amylose products were dependent upon reaction conditions and ranged from about 62% to 77%. Although gamma-CD, like alpha-CD, was easily converted in good yield, beta-CD appeared to be relatively resistant to conversion. Saccharides that have previously been reported to be inhibitors of the conversion of starch by CGTase into cyclodextrins were found to inhibit the conversion of cyclodextrins into high-amylose starch. |
