Research has demonstrated that there is a clear consumer preference for the imported rice as compared with domestically produced aromatic rice. This study was initiated to determine the effect of storage time and temperature on rice quality parameters with the goal of identifying post-harvest handling procedures that would make domestically grown Jasmine acceptable to consumers. The results of this research indicate that length of time and temperature affect rice quality (appearance, taste, cooking) but that no one set of storage conditions was optimum for all quality traits. Rough rice storage conditions should be set so that they impact the quality parameters that are most important to the particular end-user. |
