Interpretive Summary: This book chapter reviews protozoa transmitted to humans through food and water. It provides scientific names, frequency of infection, source of infection, how to diagnose, treat, and prevent the infection.

Technical Abstract: This chapter provides basic information on waterborne and foodborne diseases. It reviews six genera of pathogenic protoa transmitted by water and food. For 12 of nearly 40 species of parasitic protozoan infections the taxonomy, prevalence, route of transmission, diagnosis, treatment, and prevention are discussed.
