Interpretive Summary:

Technical Abstract: Samples of standard cultivars and experimental lines of hard red spring wheat grown in cooperative experiments in the spring wheat regions of the United States are milled each year in the USDA/ARS Wheat Quality Laboratory. Wheat and the corresponding flours are baked to determine bread characteristics. The purpose of this report is to present quality data on hard red spring wheat from the 1997 crop to cooperators and other interested parties. The evaluation of wheat quality involves the analysis of kernel characteristics, milling performance, and baking performance. The cooperating agencies and stations conducting the 1997 spring wheat nursery experiments are published annually in "Wheat Varieties Grown in Cooperative Plot and Nursery Experiments in the Spring Wheat Region" by R.H. Busch. Tests were performed on 1271 samples that were received from the following 19 stations in five states. Data presented in this report represents the evaluation of spring wheat from Advanced, Field Plot, Special, Preliminary and Uniform Regional Nurseries (URN). Three hundred twenty-two additional wheat samples were evaluated for milling and baking characteristics and were not included in this report.
