Objective:
1. Evaluate risk factors that enhance survival of Salmonella and Campylobacter across the poultry processing chain and develop targeted solutions for application during processing of broilers.
2. Determine the prevalence of multi-serovar populations, and serovar patterns in a survey of Salmonella populations in commercially processed broiler carcasses and meat parts.
3. Develop poultry slaughter and processing sampling protocols for the improved recovery and detection of Salmonella and Campylobacter.
Approach:
Cooperator will perform assays of samples collected from major broiler processing establishments to determine salmonella prevalence and load at different stages of processing and identify patterns between serovars.
Identify changes in carcass serovar populations from plant entry thru cut-up into parts. Connect serovar prevalence with serovar-specific in-plant interventions.
