Objective:
The objective of this CA are: 1) quantify the levels of monosaccharides, disaccharides and oligosaccharides in selected foods for inclusion in USDA FoodData Central and to support research projects relating food composition to health outcomes, food processing technologies and genetic/envionmental factors; 2) quantify concentrations of glutathione, oxidized glutathione and related amino acids in selected foods for research and USDA FoodData Central; 3) develop/optimize analytical methodologies for components in selected foods using Liquid chromatography/mass spectrometry.

Approach:
ARS will identify foods for analyses and submit processed aliquots to the Barile laboratory at UC Davis for selected analyses. The nature of the analyses will depend on the food identified. The Barile laboratory will be responsible for quality control/assurance of samples and return results for inclusion in the USDA FoodData Central. ARS and the Barile Laboratory will continue to execute research objectives to optimize and and validate the new approaches as new foods are analyzed.
