Interpretive Summary:

Technical Abstract: The presentation outlines the work in the Quality Assessment Research Unit that is aimed at improving analytical methods relevant to food labeling. The advantages of spectral determination methods are the replacement of slow, waste-producing wet chemical assays with instrumental methods that don't require extensive training of the operators. An NIR method for total ldietary fiber in cereal food products is the best example to date, but methods for other food components and products are certainly possible and some are under development. The potential of improved performance through combinations of spectral methods was also discussed. Further, it was shown how the application of state of the art instrumentation and algorithms makes it possible to analyze cereal food products without the need to grind the specimens. It was proposed that spectral methods could assist the FDA in screening many food products for compliance to food labeling regulations.
