Interpretive Summary: All eggs processed under USDA Agricultural Marketing Service regulations must receive a sanitizer treatment before packaging. Sanitizer systems include liquid sanitizers or UV systems, which may be used exclusively or in tandem. Liquid sanitizers deliver liquid sanitizing compounds by sanitizer bars either within the washer immediately prior to the exit or self-contained sanitizer units immediately after the washer. Technical Abstract: This training module is part of a suite focused on shell egg processing facility sanitation and pre-operational expectations. The current module focuses on the egg sanitizing systems within an egg processing facility. Experts have collaborated to develop and present the material for a wide audience with the intent of meeting a training need for both regulatory and egg industry personnel. |
