Interpretive Summary: In this module, the critical and non-critical areas of the egg quality detection systems will be identified and discussed. Additionally, examples will be used to illustrate the unsatisfactory and satisfactory condition of various components associated with egg quality detection systems.

Technical Abstract: This training module is part of a suite focused on shell egg processing facility sanitation and pre-operational expectations. The current module focuses on the egg quality detection systems within an egg processing facility. Experts have collaborated to develop and present the material for a wide audience with the intent of meeting a training need for both regulatory and egg industry personnel.
