Interpretive Summary: In this module, the critical and non-critical areas of various egg removal systems present on the processing line will be identified and discussed. These systems will include chutes for removal of bloods, dirts, leakers and severely cracked eggs and recirculating conveyor systems for rewashing dirty or stained eggs. Additionally, examples will be used to illustrate the satisfactory and unsatisfactory condition of various components associated with egg removal systems. Technical Abstract: This training module is part of a suite focused on shell egg processing facility sanitation and pre-operational expectations. The current module focuses on the egg removal system within an egg processing facility. Experts have collaborated to develop and present the material for a wide audience with the intent of meeting a training need for both regulatory and egg industry personnel. |
