Interpretive Summary: Mango is the second most widely consumed fruit worldwide, and thus makes an important contribution to human nutrition. This chapter reviews cultivation, harvesting and use of fresh and processed products for this important fruit. Subjects covered include harvesting, storage, nutrients, flavors and processing into a wide variety of products. Mango is unique because it is processed and consumed at all stages of fruit maturity. Thi chapter will be useful to consumers as well as to growers, fruit processors and food scientists.

Technical Abstract: This chapter comprises a thorough review of all aspects of cultivation, harvesting, and uses of mango, one of the most widely consumed fruit, worldwide. Of the more than 400 varieties grown and consumed worldwide, this chapter emphasizes the 30 most important varieties grown and processed in the major mango producing regions of the world. The growth, harvesting, ,diseases, insect pests, storage, nutrients, flavors and products prepared from mango are each comprehensively discussed. Varieties and products preferred by different regions are described. Mangoes are processed in all stages of maturity by certain cultures, depending on local tastes and customs.
