Research Project: Improving Detection of Antimicrobial Resistant E. coli and Salmonella in Swine

Location: Meat Safety and Quality

Project Number: 3040-42000-020-008-I
Project Type: Interagency Reimbursable Agreement

Start Date: Sep 1, 2021
End Date: Aug 31, 2024

Objective:
Determine the abilities of new and developing technologies to detect, characterize, and understand antimicrobial resistant E. coli and Salmonella populations throughout the swine farm-to-fork continuum.

Approach:
The latest sampling and laboratory methods to rapidly detect antimicrobial resistant E. coli and Salmonella populations in swine nurseries, growing barns, and processing plants will be assessed. Four groups of swine will be followed from the nursery through processing. E. coli and Salmonella populations will be detected at each step. Rapid PCR based technologies will be employed to characterize E. coli and Salmonella isolates. Antimicrobial resistance phenotypes of E. coli and Salmonella isolates will be determined.
