Technical Abstract: Plasma (an energetic ionized gas) is widely used for industrial materials processing and has recently shown promise as a sanitizing tool for food safety applications. Several different cold plasma technologies have been developed, each with different advantages and disadvantages. Many of these are entirely waterless and therefore suitable for low moisture foods. This fact sheet is an introductory primer for this class of antimicrobial technologies, written in non-technical, accessible language, suitable for the educated layperson who wishes to understand cold plasma's advantages and limitations, as well as potential applications in a food processing environment.
