Technical Abstract: Risk analysis provides processors and other industry professionals with the information and evidence they need for effective and transparent decision-making, contributing to better food safety outcomes and improvements in public health. Understanding the sources of risks or hazards and determining the efficacy of applied interventions to control the identified risks are critical components of a good food safety plan. This presentation will describe the key aspects of the risk analysis paradigm, consisting of risk assessment, risk management and risk communication. These functions are internationally accepted as the best means to develop food safety standards and systems for global food safety. The contextual focus of the discussion will be in the area of sustainable agriculture and nutrition. Properly assessing risks allows for the application of the most appropriate, most efficient, and most cost-effective means to control those risks for any given product.
