Interpretive Summary:

Technical Abstract: Cold plasma is a flexible, innovative, nonthermal food processing technology. Pioneering research by the USDA-ARS has shown it to be an effective sanitizing process against pathogenic bacteria, viruses, fungi, and parasites on a range of food commodities. This presentation will discuss USDA-ARS food safety research in general, and on this emerging food safety intervention specifically: the need for the research, the professional context for its research and development, and the current state of the art.
