Interpretive Summary: Over the past 8 years, research in the Food Science & Market Quality & Handling Research Unit has demonstrated the value-added uses for the estimated 40 million to 70 million pounds of peanut skins that are stripped annually from the nut in the process of making peanut butter, snacks, oil, or candy. This research has shown the untapped nutritional potential of peanut skins which are typically discarded as waste by-products, as a natural antimicrobial poultry feed additive in poultry production systems and potential strategy to improve food safety of poultry meat and eggs by reducing the levels of food borne pathogens in production environments. Peanut skins contain health-promoting compounds that prohibit the growth of various bacteria that are commonly found in food production systems.
